Purin ( Japanese caramel pudding )

Instructions 


1. Prepare the Caramel: - In a heavy-bottomed saucepan, combine the sugar and water. Stir gently until the sugar dissolves completely. - Place the saucepan over medium heat and let it cook undisturbed until the mixture turns into a rich amber color. Swirl the pan occasionally for even caramelization. - Remove the saucepan from heat and immediately pour the caramel into individual ramekins or a large pudding dish. Tilt the dish to ensure the caramel coats the bottom evenly. Allow the caramel to cool and harden. 


2. Prepare the Pudding Mixture: - Preheat your oven to 325°F (165°C). - In a mixing bowl, gently whisk the eggs and sugar together until well combined. - Gradually add the whole milk and vanilla extract, whisking continuously to create a smooth mixture. 


3. Assemble and Cook: - Carefully pour the pudding mixture into the prepared ramekins or dish, on top of the hardened caramel. - Place the ramekins or dish in a larger baking pan. Create a water bath by pouring hot water into the larger pan, being careful not to get any water into the pudding mixture. The water should come up to about halfway up the sides of the ramekins or dish. - Bake in the preheated oven for approximately 40-45 minutes, or until the puddings are set around the edges but still slightly wobbly in the center. - Remove the ramekins or dish from the water bath and let them cool to room temperature. 


4. Serving: - Once the caramel puddings have cooled, cover each ramekin with plastic wrap and refrigerate for at least 2-3 hours, or preferably overnight. This allows the flavors to meld and the custard to set completely. - To serve, run a sharp knife around the edges of each ramekin to loosen the pudding. Place a dessert plate on top and gently invert the ramekin, allowing the caramel to drizzle over the pudding. - Enjoy your homemade Japanese caramel pudding solo, or garnish it with fresh berries, mint leaves, or a dollop of whipped cream for an added touch of elegance.
